rVoix is the best recording software out there, only because it records the line instead of a speaker, so you get a good audio. The software is also open-source and requires root.

I tested this just now on my "HTC Wildfire" with "Cyanogenmod 7" and the recording is very good. It records in WAV, you can hear everything clearly!
Be aware that it does not work on all the phones, so test it out and see if it works for you

By what I understood, it is legal if both ends know that the call is being recorded.

hacker@sr.gov.yu in MIUI 4.0 you can record without any software but poor quality
