Need some direction please.

Hello all, hope this is the right place for this post if not please feel free to move it to the right place or let me know and il switch it across.

Basicly long story short have been looking into remote network / IP sniffing and am wondering what the best thing/s would be to sniff packets remotely and to read packet data in a simple method.

Ok, because you didn't specifically mention tools, I will give you the ancient chinese secret to remote network sniffing: tunneling (icmp, ssh, dns, http, gre, pptp, doesn't matter, just tunneling in general).
