My question is:

How should one go about hacking a server-side feature of a mobile game?

For example, a scoreboard or friend dynamics, etc. I would like to know this because I want to be able to STOP these types of hacks. Does anyone have any ideas or helpful resources to instruct me, or give me a general idea, of why I need to know? An answer would be very much appreciated.
